My headcannon: The transformed jocks could easily remember their original history and names if they tried, but are too dense and horny to do so of their own accord. This means that they'll freak out - only to lapse back into being horny cowgirl cheerleaders whenever they lose focus.
Personally, I prefer the style where they could remember who they used to be anytime they want, but are just happier and casually okay with their new identities.
