How did they go about doing that?

1. Sanji put something in the tea he made for her, either knowingly or not.
2. *Nami swiped a strange Dial from Usopp and used it on her.
3. *Chopper dropped one of his Rumble Balls and she unwittingly tried it, causing her powers to go out of control.
4. Something Else.
