So they just happened to run into them? In rural China? That seems improbable, but alright. I just figured they had all confided in each other back in Japan and Akane and Ukyo had decided to tag along just to get away from everyone else in Nerima for a while. (And maybe to get instant Jusenkyo packets since you mentioned those.)
The basis of Akane’s plan at the end is sound, at least by Nerima standards, but here’s a suggestion for fleshing that out. How they could still join the schools and thereby satisfy the fathers: Add Ukyo to the Saotome registry (which also sort of satisfies the Kuonji-Saotome agreement) and add Konatsu to the Tendo registry. Then the families could be tied through two marriages.

I'm sorry if it wasn't clear. But they did meet in Japan when they were having sex. Then they went over to China to go to Jusnekyo.
